Ceremonial grade is made from the youngest, shade‑grown leaves, offering a delicate, smooth umami flavor with little bitterness. It's best for traditional tea (usucha or koicha). Culinary grade is slightly more robust, with a vibrant green color and stronger taste, ideal for lattes, smoothies, baked goods, and recipes.
While a bamboo whisk gives the best results (smooth, frothy, no clumps), you can also use a handheld milk frother or a small regular whisk. Just add a little hot water to the matcha powder, stir into a paste, then add more liquid and froth until bubbly. A spoon works but may leave lumps.
